My husband and I LOVE waffles, but then again, who doesn’t? 😊 I like to whip these up on Saturday mornings as a special treat after a long work week. Serve these waffles with homemade sugar free mixed berry compote instead of syrup to avoid the extra sugar.
I use monkfruit to sweeten the waffles and compote in this recipe. Monkfruit is a fantastic and natural sugar alternative. Please read this article for more information on the benefits of using monkfruit sweetener in place of refined sugar.

Ingredients
1 Cup White Whole Wheat Flour
1 ¼ Cups All Purpose Flour
1 Tablespoon Baking Powder
3 Tablespoons Monkfruit Sweetener with Erythritol*
½ Teaspoon Salt
1 Teaspoon Cinnamon
2 Large Eggs Separated
1/2 Cup Canola Oil
2 Cups Almond Milk (no added sugar)
1 Teaspoon Vanilla Extract
Instructions
1. Preheat your waffle iron and spray with nonstick cooking spray and set aside.
2. In a large bowl, mix flour, baking powder, sugar, salt and cinnamon.
3. In a medium bowl, beat egg whites with a hand mixer until stiff peaks form. Set aside.
4. In a separate medium bowl mix the egg yolks, canola oil, almond milk and vanilla extract.
5. Add egg yolk mixture to the dry ingredients and stir to combine.
6. Fold in egg whites.
7. Scoop batter onto the hot waffle iron and cook until light brown and golden**
8. Serve waffles hot topped with mixed berry compote, maple syrup, or other favorite toppings.
*Monkfruit is a natural, zero calorie and carbs sweetener that does not raise blood glucose levels (See Healthline article HERE). You could also try replacing the monkfruit with another preferred sweetener like maple syrup or Splenda, which should yield similar results.
** I use an Oster waffle iron which uses about ½ cup of batter per waffle. The amount of batter for each waffle will vary based on the size and model of your waffle iron.
Mixed Berry Compote
Ingredients
1 ½ Cups Mixed Fruit (Fresh or Frozen)
1 ½ Tablespoons of Water
2 – 3 Tablespoons (or to taste) Monkfruit Sweetener or maple syrup
1-2 Teaspoons of Lemon Juice
Instructions
1. Place fruit, water and lemon juice in a small saucepan over medium heat.
2. Once bubbling, reduce heat and use a spoon to mash the fruit.
3. Add monkfruit sweetener and continue cooking over medium-low heat for 10-12 minutes, stirring occasionally.
4. Remove from heat and serve hot over fresh waffles, or cool and store in a container for later use.
